When you start getting longer spots, do you still time every bit separately?

I’ve started timing bits on their own as well as the full set, mostly because “this is about three minutes” turns out to be a wildly optimistic unit of measurement once there are actual laughs and pauses. If you’re moving from fives towards tens, do you keep a rough time for each chunk so you know what can be cut, or does that make the set feel too engineered? I want enough control to lose two minutes cleanly without staring at my notes like I’m doing emergency surgery.
